The Evoluzione head is treated with Gi.Metal's S.H.A. hard anodising, an oxide process that stands up to heat, knocks and abrasion and stays smooth for years. The head is smaller than a classic peel and the perforations are placed to shed flour in two directions, so the base goes in clean. The head to handle joint is reinforced with three overlapping rivets.
